blue plate special

Some days, there's just stuff to do after work and school. Not so fun stuff, like take the car into the shop during rush hour traffic. And even though you drive by 100+ fast food restaurants on the way there and back, what you really want is to do is get home and be at peace, relaxing with the fam around a nice meal.

Enter the Blue Plate Special. This is Miss M's favorite and comes together in 15 minutes tops. It's nothing fancy and certainly wouldn't win any veggie chef awards, but it's the reality of our dinner table on a night like tonight. And, it's yummers!

I giggle because this really does look like a school cafeteria special. But, it's actually very vegetarian friendly: Morningstar Farms Chik Patties, Annie's Homegrown Mac n' Cheese, and peas. Lots and LOTS of peas. I prefer the C & W brand for their sweet pop.

Just so you know, the Blue Plate is a great way to get kiddos rollin' with veggie food. I've served it many times when M has friends over for lunch or dinner and they gobble it up!
