It's been a gorgeous weekend here. Oh, to finally see the blue sky again, to feel the sun on my shoulders, to slip on flip flops and take a first survey of the garden . . . the first sign of daffodil shoots = bliss! It's been an extremely fun weekend, too, with the school carnival, church trivia night, brunch with good friends, and some great girlie time to celebrate my Mom's birthday.
Needless to say, I've hardly been in the kitchen. There's just been so much wonderful L I F E to savor, I haven't felt the need or made the time to cook. Plus, with all of the festive activites, I've been eating a ton o' goodies. Everything from spinach dip and homemade chocolate chip cookies at last night's party to gnocchi with gorgonzola sauce at lunch today. Oy. All fabulous, but it's time to simplify.
The next few days are my time to prepare for our upcoming road trip adventure. (We're psyched!) Therefore, in lieu of recent overindulgence balanced with the need to clean out the fridge, I hereby decree Weird Food Week.
My goal this week is to feed my family well, of course, but with whatever we currently have on hand. It's time to move some merchandise! So, fairly warned that some potentially unusual meals are on their way, tonight I fed my sweeties bunches of freshly chopped veggies (carrots, mini-cucumbers, sweet peppers) with tzatziki, steamed broccoli, and grilled cheese sandwiches. Simple, but good + major progress in eating up the fresh stuff. I simply can't stand to see my beloved veggies go to waste.
We will see what I can pull together for the rest of the week. No matter how strange it gets, I promise that I won't touch the kitty vittles. :)
